The eye stripe surgeonfish, (Acanthurus dussumieri) like all surgeonfish has a razor sharp, retractable tail spine that is as sharp as a surgeon’s scalpel. These spines are most often used for defense. The eye stripe surgeonfish has unique and intricate patterns paired with amazing coloration. They can actually change the coloration intensity with their mood! Although these fish are absolutely gorgeous creatures on the reef, their numbers are plentiful and they do make a great meal. I prefer them on the grill and find that they have a taste similar to a blend of lobster and shrimp! This was a rather large fish and made dinner for us 2 nights in a row! This piece is Framed in a shadowbox method. The piece urachi wetmounted with deckled edges and appears to float in the frame.
